WALK ON FOR J.D.R.F.
My brother Matthew has had type 1 diabetes for over 15 years and he recently was asked by J.D.R.F. to sit on their board, which is a great honor. The walk was about 3 miles and was held at Wheeler Farm. Lunch and drinks were provided afterwards along with many kid friendly activities such as face paintings, bouncy houses, ice creams stands and an animal petting station.

SURVIVAL MODE...
boil 2 quarts chicken broth with 2 celery stalks sliced, 8 carrots sliced, 1 onion diced, ( or as many veggies as you want) until tender.
add 1 or 2 (depending on your preference of thickness, i used 2) cans cream of chicken soup
cook noodles separately ( i used wide egg noodles) as package describes
add chicken, frozen peas and corn into veggie broth and simmer 3 minutes
add noodles, salt, pepper, basil, and lemon juice (i always put lemon juice in my soup but you don't have to) for 2 minutes

Chef Jules
Feta Sun-Dried Tomato Turkey Burger Sliders
2 Tablespoons extra virgin olive oil
1 lb ground turkey
1/2 Cup crumbled feta cheese
1/4 Cup sun-dried tomatoes, jarred in olive oil
1/2 Cup fresh baby spinach leaves, chopped
Pinch of Kosher salt, fresh cracked pepper and Lawry’s Garlic Salt with Parsley
Sun-Dried Tomato Mayonnaise
1 Cup mayonnaise
2 Tablespoons sun-dried tomatoes, packed in olive oil, drained
Baby hamburger buns or dinner rolls, split and warmed
2 Cups fresh baby spinach leaves
1. Heat oil into a large skillet over medium heat. Place turkey, feta, sun dried tomato, spinach and seasonings into a mixing bowl. Mix until just combined. Form 1/2 Cup little patty’s and place onto a cookie sheet. Once all are formed, place batches in hot skillet. Cook for 3-4 minutes per side or until golden brown and cooked through.
2. Place mayonnaise and tomatoes into a bowl; mix to combine. Spread over insides of warm rolls. Layer bottom roll with spinach and the burger. Close with top roll and eat ![]()
