CHOCOLATE CHIP COOKIE DOUGH POPS!


OK- so here is the recipe for the best treats ever! I am not one for cookies. In fact, I never eat cookies, but dough, on the other hand, is a staple of mine. Sweets gets so mad at me if I buy or make CCCD and just eat it plain. He says that it is unhealthy and that I will get sick with salmonella. Well, honey, I have news for you. These pops don't have eggs! Instead they are made with Greek Yogurt...so I can eat as many as I want! (not really, but its worth a try) 

1 stick unsalted butter at room temperature
1 cup plus 2 tablespoons all purpose flour
1/2 teaspoon baking soda
3/4 teaspoons salt
1/2 cup brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/3 cup Greek yogurt
1 cup semi-sweet chocolate chips

In a mixer bowl cream the butter and sugar until light and fluffy. Beat in the yogurt along with the vanilla for an additional 2 minutes. In a separate bowl combine the flour, baking soda and salt. Add all at once to the butter mixture and stir until incorporated. Fold in chocolate chips. 
Scoop spoonfuls, rounded into balls onto waxed paper lined cookie sheet and spear each one with a lollipop stick. Place in the freezer until frozen. Dip frozen balls in chocolate (I used the semi-sweet chocolate morsels) and place back in freezer until ready to eat.
The great thing about these is that you can freeze them forever. Almost. I intend on making more just to have on hand for a snack but I am going to wrap the dough balls in wax paper (think...taffy twists) and put them all inside a ziplock bag. Then I can just pop one out, unwrap it and enjoy it whenever I want...free of salmonella! Oh and if you still think they are unhealthy even without the eggs, try using squashed banana instead of butter. It works just the same!
